INGREDIENTS:
Serves 2 - 4
- 500g Lean mince, free range organic
- 2 Carrots, grated
- 1 Zucchini, grated
- 1 Capsicum, chopped
- 2 cloves Garlic chopped
- 1 handful Oregano,
- 1 handful Basil
- 1 handful Parsley, chopped
- 2 tbsps Olive oil
- Pumpkin seeds for added zinc ☺
- Pinch of Celtic sea salt
INSTRUCTIONS:
- Cook mince in olive oil with garlic.
- Once meat is almost browned add the rest of the ingredients.
- Cook for another 10 minutes.
- Serve in lettuce cups and dress with pumpkin seeds.
