Almond Meal Pancakes

You can use other nut flours as well. I improvise with what’s in the pantry.

 

INGREDIENTS:

Serves 2

  • 1 cup Almond meal
  • 2 Eggs
  • ¼ cup Water (for puffier pancakes, you can use sparkling water)
  • 2 tsp Coconut oil
  • ¼ tsp Salt
  • 1 tsp Stevia

 

INSTRUCTIONS:

  1. Mix ingredients together and cook as you would other pancakes.
  2. Top with berries and a little Manuka honey or maple syrup and coconut oil.
