Coconut Chicken Or Fish

My boys’ favourite dish

 

SERVED WITH SPINACH/AVOCADO/MANGO AND BLUEBERRYSALAD SPRINKLED WITH PEPITAS

 

INGREDIENTS:

Serves 4

  • 450ml can Coconut milk
  • 4 pieces Chicken or fish of your choice
  • ½ cup Lime juice
  • 1 tsp Curry powder

 

INSTRUCTIONS:

  1. In the morning take 4 pieces of chicken or fish and soak them in a can of coconut milk with half a cup of lime juice and a teaspoon of curry powder.
  2. In the evening, grill your chicken or fish.

 

SALAD: Combine spinach, half a mango, a full punnet of blueberries and a full avocado. Sprinkle with pepitas.
